This recipe was simple enough, but I was a bit perplexed by it as I’ve never used a recipe where the jam is mixed right into the dough. At first, I thought that the cookies would have a jam filling or topping, but the jam is actually incorporated, giving the cookie a subtle flavor of your fruit of choice.
The dough was very simple to prepare, and these were a quick cookie to make. They really do taste just like biscuits, as Dorie mentions in the recipe’s introduction. I used a thick strawberry jam. I had raspberry preserves on hand, but it is chock full of seeds and I didn’t feel like straining the seeds out. I didn’t taste the pinch of ginger at all, and being a ginger lover, I would have loved chunks of crystallized ginger in the cookie as Dorie suggests in her “Playing Around” section - but my husband is not a huge fan, so I left them out. My husband liked the texture of these cookies better the next day.
These were good, though I don’t know if I’d make them again. There are so many new recipes to try that I don’t often repeat unless a cookie is truly stellar (like my favorite simple chocolate chip cookie recipe). We enjoyed these very much but I don’t think there will come a day where we’ll crave these cookies.

Strawberry jam sounds tasty. I actually didn’t strain out the seeds from my raspberry jam, but the seeds didn’t bother me
