I have been MIA lately – sorry about that! My husband and I took a trip to Chicago and we just got back, so things have been a bit crazy! I made these cookies last week, since I couldn’t make the linzer cookies (I don’t have any cookie cutters and couldn’t get to the store to buy any in time). I absolutely loved them and they were a huge hit with everybody I shared them with. I made them as slice-and-bake cookies, which are such a joy to make. I decided to sandwich them together with a layer of dulce de leche.
Since the cookie itself wasn’t too sweet, the dulce de leche didn’t take the cookies over the top with sweetness. The cookies were very buttery with a bit of a salty edge, and quite delicious on their own as well. I ended up doubling the recipe and making the cookies twice. I think these would also be great with a jam or chocolate filling. I’ve never really made sugar cookies before, so I loved this recipe and will definitely keep it in my cookie repertoire.
I didn’t have any problems with the recipe – pretty much followed it to a tee (besides doubling it). Sugar cookies & dulce de leche?! I think I’m in love
Everybody who ate them were too! It was kind of an impulsive, last -minute idea too, as I had some leftover homemade dulce de leche sitting around.

You’re right! I’ve been meaning to make alfajores for awhile now, but have always been, for some reason, intimidated by sandwich cookies. This helped me get over it!

As for the dulce de leche, I made a cheater’s version by heating sweetened condensed milk in a bowl over a saucepan of simmering water for a few hours .. there are lots of different ways to make it. You can also buy it in a can in the Latin foods aisle of the grocery store.
