I love to bake cookies. Most of them bake quickly, cool quickly, and are easy to share. Needless to say, I was excited about this week’s Tuesdays with Dorie recipe – Chunky Peanut Butter and Oatmeal Chocolate Chipsters. I’ve made peanut butter chocolate chip cookies, oatmeal chocolate chip cookies, and normal chocolate chip cookies; but putting all 3 of these cookies together as one? This recipe made a ton of cookies and received rave reviews from the many people I shared these with.
My cookies came out large and flat – I was in a rush to get these baked and packed up, so I didn’t chill the dough as Dorie suggests in her recipe. They were really delicious though – chewy, with a subtle peanut flavor and just enough chocolate in each cookie. Even though there are 3 cups of oatmeal in the dough, there was no actual visual evidence of oatmeal in them. I used super-chunky peanut butter, which added a nice crunchy dimension.
I loved these cookies, but the problem with cookies is the number of recipes and variations out there – with so many different cookies to try, I rarely bake the same recipe twice. Still, I definitely recommend these cookies to feed a crowd, and these are also very kid-friendly! If I were to try these again, i would definitely chill them – I was kind of hoping for a taller, chunkier cookie – mine spread and were very flat. Still tasted great, but there’s something lovely about a very thick cookie (I think I’m just daydreaming about one of the best cookies I’ve ever had, from Levain bakery in NYC!).

We chilled the dough and they did not spread out. But I think yours look just wonderful!

These look great Carmen. Do you recommend I chill them first like Dorie suggests, or as you did? I hardly bake anything twice, but I have to keep a stash of lunchbox cakes (banana, etc) and child-friendly cookies for the greedy kiddo at all times or there’ll be hell to pay.
Your “spread-out” cookies sure look nice, even if you would have preferred them thicker!
A chipster, huh? That in my book is easly translated to healthy cookie – lol. Great job here and those pics are great.
Chilling definitely helps in the spreading department, it took me forever to figure that out! Whatever the case your cookies still look delish!
